Pumpkin White Chocolate Muffins
1/2 cup walnuts
1 2/3 cup all purpose flour
1 cup sugar
1 teaspoon each ground cinnamon and nutmeg
1/2 teaspoon each ground ginger and nutmeg
1 teaspoon baking soda
1/4 teaspoon each baking powder and salt
1 14 oz. can puree pumpkin
4 oz. unsalted butter
8 oz. white chocolate chips and Skor bits
Preheat oven to 350F.
In a large bowl, mix the flour, sugar, spices, baking soda, baking powder and salt.
In another bowl, mix together eggs, pumpkin and unsalted butter. Add in chocolate chips and nuts.
Combine wet and dry ingredients and mix until dry are moistened. Do not over mix. Scoop batter into greased or paper lined muffin tin.
Sprinkle top with Skor bits and bake for about 20 minutes or until puffed and springy to the touch.
Sprinkle more Skor bits on top of muffin after removing from oven. Cool and remove from tin. Makes 12 muffins.
