1- 3 or 4 bone -7 lbs. standing prime rib
Lots of sea salt and ground pepper and twine
8 springs of fresh thyme
Garlic seasoning paste
Slice along ribs. Spread garlic, salt/pepper, thyme and tie with twine.
Preheat to 450 degrees and place in lower 1/3 of oven
Thoroughly dry meat, coat with salt and pepper.
Sear top rib side up 30-45 min. until brown.
Flip roast over-lower temp. to 300 degrees.
Continue roasting until thermometer reads 140
degrees at thickest part of meat.
(Med. Rare -3hrs.)
Loosely tent meat with foil for 20 min.
Do not open oven door.
Temperature should read 150 degrees for medium rare.
