What better time then now, to share one of our favorite comfort food recipes from our cookbook
“Tasty Designs”.
Not Just Another Lasagna
½ lb ground chicken
1 med onion chopped
2 cloves garlic
1 teaspoon basil
1 teaspoon dried oregano
½ teaspoon pepper
½ teaspoon dried thyme
½ teaspoon salt
1 19 ounce can Tomatoes
1 5½ can tomato paste
2 large carrots
1 10 ounce can mushrooms
1 package frozen spinach
1 cup 1% cottage cheese
12 Lasagna noodles (Oven ready)
1½ cups mozzarella
Cook chicken, onions, garlic and seasonings until chicken is no longer pink. Add tomatoes, paste, carrots, mushrooms, and spinach. Let simmer 10 minutes. Spray 9×13 pan with non-stick cooking oil. Cover bottom of dish with about 1 cup sauce. Cover sauce with noodles. Divide remaining sauce into thirds and cover noodles with 1/3 of the sauce. Spread ½ cup cottage cheese over sauce. Repeat from noodles ending with last 1/3 of the sauce. Cover with mozzarella. Bake at 350 for 40 minutes or until noodles are tender.
