Lazy and Boozy Brownies
1 Box Graham Cracker’s / Crumbs
1/2 Cup Butter
1 Jar (500g) Unsalted Peanut Butter
3 Boxes Baker’s Chocolate – Dark or Semi-sweet
1/2 Cup Brown Sugar
1 Heaping Tablespoon Cocoa Powder
1 Teaspoon Vanilla extract
1/4 Cup Spiced Rum or Whiskey
Splash of Bailey’s Irish Cream
Preheat oven to 350 degrees. Grease a large oven pan with butter.
In a large mixing bowl, combine brown sugar and graham cracker crumbs. If using full crackers, crush them in a Ziploc bag with a rolling pin to form crumbs. Melt the butter, and stir into the crumb mixture until fully absorbed. Stir in vanilla, cocoa powder, and peanut butter, and set aside.
Melt the chocolate in a saucepan on the stove, with additional butter if required. Once chocolate is molten, stir the Irish cream and Rum (or whiskey) into the chocolate, then pour into the mixing bowl with the other ingredients. Stir until fully combined.
Pour the combined mixture into the greased pan, and smooth flat with a spatula.
Bake for 10-15 min. Keep refrigerated, and serve cold. Cut the cold brownies into 1 inch squares.
Note: Technically these are no-bake brownies, however the short stint in the oven helps them to set properly.
