Breakfast Casserole
Ingredients:

- 6 large eggs
- 2 cups milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried thyme (optional)
- 1/2 teaspoon dried oregano (optional)
- 1/2 teaspoon dried basil (optional)
- 8 slices of bread, preferably stale or day-old
- 2 cups shredded cheddar cheese
- 1 cup cooked breakfast sausage or bacon, crumbled (optional)
- 1 cup diced bell peppers (red and green for color)
- 1 cup diced onions
- 1 cup diced mushrooms (optional)
- Cooking spray or butter for greasing the baking dish
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
- In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, onion powder, dried thyme, dried oregano, and dried basil (if using). Set this egg mixture aside.
- Cut or tear the slices of bread into bite-sized pieces and place them in the greased baking dish.
- Sprinkle the shredded cheddar cheese evenly over the bread pieces.
- If you’re using cooked breakfast sausage or bacon, sprinkle it over the cheese layer.
- In a skillet over medium heat, sauté the diced bell peppers, onions, and mushrooms (if using) until they are tender and lightly browned. Drain any excess moisture.
- Spread the sautéed vegetables over the meat and cheese layers in the baking dish.
- Pour the prepared egg mixture evenly over the entire casserole.
- Gently press down on the ingredients with a fork to ensure that the bread absorbs the egg mixture.
- Cover the baking dish with foil and let it sit in the refrigerator for at least 30 minutes or overnight to allow the flavors to meld.
- When you’re ready to bake, remove the casserole from the refrigerator and preheat your oven to 350°F (175°C) again.
- Bake the casserole, covered with foil, for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 15-20 minutes or until the top is golden brown and the casserole is set.
- Let the Breakfast Casserole cool for a few minutes before slicing and serving.
