BBQ Pork Ribs

Ingredients:

  • 2 racks of pork ribs (about 4-5 pounds)
  • 1/4 cup brown sugar
  • 2 tablespoons paprika
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 2 cups barbecue sauce (your favorite variety)
  • Olive oil for brushing

Instructions:

  1. Start by preparing the ribs. Remove the membrane from the back of the ribs by sliding a knife under it and then using a paper towel to grip and pull it off. Trim any excess fat.
  2. In a small bowl, combine the brown sugar, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper to make a dry rub.
  3. Rub the dry spice mixture evenly over both sides of the ribs, massaging it into the meat. Let the ribs sit with the rub on for at least 30 minutes to allow the flavors to penetrate.
  4. Preheat your grill to medium heat (about 250-275°F or 120-135°C). If you’re using a charcoal grill, set it up for indirect grilling.
  5. Brush the grill grates with olive oil to prevent sticking. Place the ribs on the grill, bone side down. Close the lid and cook for about 2-3 hours, maintaining a consistent temperature.
  6. Every 30 minutes, baste the ribs with barbecue sauce, turning them occasionally to ensure even cooking. Continue to cook until the ribs are tender and have reached an internal temperature of about 190-203°F (88-95°C).
  7. Once the ribs are done, remove them from the grill and let them rest for a few minutes. Then, slice them between the bones, and serve with extra barbecue sauce on the side.
