Almond Butter Energy Bites

2/3 cup quick cooking oats
1/3 cup unsweetened shredded coconut
1/3 cup mini semi sweet chocolate chips
2 Tbsp. ground flax or chia seeds
1 cup natural almond butter
1/4 cup pure maple syrup
1 tsp. vanilla

In a small bowl, combine oats, coconut, chocolate chips, and flax meal. Mix well and set aside.
In a medium bowl, mix almond butter, maple syrup and vanilla until smooth. Wooden spoon works best!
Add oatmeal mixture and blend well.
Using about 1 tsp. dough per bite, roll mixture into 20 ball bites using hands.
Wet hands occasionally to help prevent dough from sticking.
Store in airtight container in fridge. Makes 20 bites.
