Breakfast Casserole

Ingredients:

    • 6 large eggs
    • 2 cups milk
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • 1/2 teaspoon dried thyme (optional)
    • 1/2 teaspoon dried oregano (optional)
    • 1/2 teaspoon dried basil (optional)
    • 8 slices of bread, preferably stale or day-old
    • 2 cups shredded cheddar cheese
    • 1 cup cooked breakfast sausage or bacon, crumbled (optional)
    • 1 cup diced bell peppers (red and green for color)
    • 1 cup diced onions
    • 1 cup diced mushrooms (optional)
    • Cooking spray or butter for greasing the baking dish

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, garlic powder, onion powder, dried thyme, dried oregano, and dried basil (if using). Set this egg mixture aside.
  3. Cut or tear the slices of bread into bite-sized pieces and place them in the greased baking dish.
  4. Sprinkle the shredded cheddar cheese evenly over the bread pieces.
  5. If you’re using cooked breakfast sausage or bacon, sprinkle it over the cheese layer.
  6. In a skillet over medium heat, sauté the diced bell peppers, onions, and mushrooms (if using) until they are tender and lightly browned. Drain any excess moisture.
  7. Spread the sautéed vegetables over the meat and cheese layers in the baking dish.
  8. Pour the prepared egg mixture evenly over the entire casserole.
  9. Gently press down on the ingredients with a fork to ensure that the bread absorbs the egg mixture.
  10. Cover the baking dish with foil and let it sit in the refrigerator for at least 30 minutes or overnight to allow the flavors to meld.
  11. When you’re ready to bake, remove the casserole from the refrigerator and preheat your oven to 350°F (175°C) again.
  12. Bake the casserole, covered with foil, for 30 minutes.
  13. After 30 minutes, remove the foil and bake for an additional 15-20 minutes or until the top is golden brown and the casserole is set.
  14. Let the Breakfast Casserole cool for a few minutes before slicing and serving.
