Creamy Mushroom Soup

Ingredients:

    • 1 pound fresh mushrooms, sliced (button or cremini mushrooms work well)
    • 1/4 cup unsalted butter
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 2 tablespoons all-purpose flour
    • 4 cups chicken or vegetable broth
    • 1 cup heavy cream
    • Salt and pepper to taste
    • Fresh thyme leaves or chopped parsley for garnish (optional)

Instructions:

  1. In a large pot, melt the butter over medium heat. Add the chopped onions and garlic and sauté for about 2-3 minutes, or until they become translucent.
  2. Add the sliced mushrooms to the pot and cook for about 5-7 minutes, or until they release their moisture and begin to brown.
  3. Sprinkle the flour over the mushrooms and stir to combine. Cook for another 2-3 minutes, allowing the flour to cook and thicken the mixture.
  4. Gradually pour in the chicken or vegetable broth while stirring continuously to avoid lumps. Bring the mixture to a simmer.
  5. Allow the soup to simmer for about 15-20 minutes, or until the mushrooms are tender and the flavors meld together.
  6. Use an immersion blender or transfer the soup in batches to a regular blender to puree until smooth.
  7. Return the pureed soup to the pot if using a regular blender. Stir in the heavy cream and heat the soup over low heat until it’s warmed through. Do not bring it to a boil.
  8. Season the soup with salt and pepper to taste. Adjust the seasoning as needed.
  9. Ladle the creamy mushroom soup into bowls, garnish with fresh thyme leaves or chopped parsley if desired, and serve hot.
